Easy Chinese Chow Mein

The kind of meal you eat with just a bowl and spoon! Easy, tasty and budget friendly. Mince, vegetables, noodles and egg with a tasty Asian flavour!

Ingredients
 

  • 1kg beef mince
  • 1 heaped teaspoon minced garlic
  • 1 heaped teaspoon minced ginger
  • 1 teaspoon of sesame oil
  • 2 tablespoons of salt reduced soy sauce
  • 350g of slaw mix (shredded cabbage, carrot, celery, red onion)
  • 1/2 cup sliced spring onions/green shallots
  • 2 packets of instant 2minute noodles (I choose Mi Goreng flavour which is Soy and Mild Spice )
  • 4 eggs

Instructions
 

  • Add beef mince, garlic, ginger, sesame oil and soy sauce to slow cooker and cook on low for 4hrs, stirring occasionally to break up any lumps.
  • Add slaw mix, shallots and just 1 of the flavour sachets from the instant noodle packets
  • Cook this on low for an additional 30mins
  • Towards the end of this time cook your instant noodles as per instructions on stove top etc (but only use the one remaining seasoning packet with the two noodle blocks during cooking)
  • When cooked drained all the seasoned cooking water and add just the cooked noodles to the slow cooker.
  • After 5mins transfer to serving bowl/s
  • Separately cook your 4 eggs scramble while plating up your chow mien. A fast way to do this is to whisk the eggs and microwave for 3-4 minutes on a large flat bowl until set. Carefully slice/cut up scrambled eggs.
  • Top serving bowl with a few egg strips each.

Notes

  • Sprinkle some extra spring onion slices on top for a crisps addition as per photo
  • You may like to increase soy sauce or add extra spices like chilli etc depending on your taste preferences. As it is this recipe is mild and friendly for the whole family
  • A sprinkle of curry powder would also be a nice addition
  • It would work equally nice with other types of mince also
  • For a low carb option plate up your serve before noodles are added as I did for LCHF

  1. Absolute 5 star meal. Budget friendly and no fuss. I tasted before adding slaw and wanted a little more kick so I added the oil, chilli and soy sauce sachets from the mee goreng noodle packs. I also sprinkled the dried shallots over the top when serving. Beautiful meal whether you add extras or not

  2. Made this tonight. Never had chow mein before but kids (2 teenagers) & I loved it. I cheated a bit to make it quicker & cooked my mince first before adding it to the slow cooker. Yum!

  8. When I was growing up my mum used to make chow mein all the time in the old electric frypan, and we loved it. But as an adult I discovered this chow mein recipe and we love it. We cook it regularly. We add approx. 2 tablespoons of curry powder at the start of the process as we like a bit of spice, but otherwise we make it according to the recipe. We do top it off with the egg and spring onions, but we are super heavy handed on the spring onions because it suits our tastes. Absolutely delicious, super easy to make and always gives us leftovers for lunches.

  10. Made this yesterday and it was great. Only thing I did different was halve the meat as I only had a 500g pack of mince in the freezer.

  12. Made this today -yummy! Plenty for dinner and leftovers in the freezer for a “rainy day”. Note to self – remove dressing sachet before tipping slaw mix into slow cooker! Luckily I noticed it as I stirred it all together 😛

    Made this last weekend, big hit with my husband and 2 adult sons (manchildren). I used 3 packs of ramen noodles and added dash of oyster sauce and sriracha hot chilli sauce to the mince mixture and some chopped chillies with the shallots to sprinkle on top with the egg because we like things a bit spicy. So delicious! Next time I’ll have to double the ingredients because there wasn’t any left for seconds and they all wanted more! Great dish 🙂

  14. Such an easy recipe. Fed four and had leftovers for work! I did add broccoli, and a little bit of mashed pumpkin just to use it up before it went off which worked good as well. Could really add anything you like to it.

  15. Made this for the first time & it was delish. Hubby was impressed. I only used 500g of mince but used the same amount of everything else in the recipe. I also added some mixed veges & some broccoli & cauliflower just for some extra veg. Will definitely make again
