A different take to a marinade that would work just as well with lamb, beef or chicken

Ingredients
 

  • 1 kg diced pork
  • 2 Tbsp garlic
  • 1 med onion diced
  • 1 bottle of beer
  • 1 Tbsp thyme
  • 3 Bay leaves
  • 2 Chicken stock cubes
  • 1/2 cup sugar
  • 1/2 cup sweet chilli
  • 1/2 cup tomato sauce

Instructions
 

  • Place all ingredients in slow cooker and cook on high for 6 hrs.
  • Remove pork and reduce liquid on stove top until it has a consistency of thin gravy, whisking occasionally.
  • Serve with potato mash and your favourite veg on the side

Notes

  • Depending on the type of beer used, you may want to add either extra sugar and/or sweet chilli
