Delicious lemon cake

Cake Ingredients

125 gram room temp butter

185 gram sugar

185 gram self raising flour

4 tablespoons milk

2 large eggs

Grated rind from 2 large lemons

Syrup ingredients

6 tablespoons lemon juice

6 tablespoons icing sugar


1Cream butter and sugar then beat in eggs

2Add flour, lemon rind and milk mix well

3Pour into loaf tin or whatever you want to use

4Place in slow cooker and cooker and cook on HIGH with Tea Towel under lid

5Remove cake tin from cooker when cake is cooked and prepare syrup

6Using a metal skewer prick holes in cake

7Pour syrup over cake and allow to cool completely before removing from tin.

What does “syrup ingredients ” mean in the list of ingredients and how much do you use of whatever it is?

Really really nice. Simple and quick too. The first one I’ve done and it wont last 1/2 an hour in my house. I used a 3.5 l and substituted sugar with splenda. Thanks for such a great and tasty recipe Roselyn.
