Delicious lemon cake

Ingredients
Cake Ingredients
- 125 gram room temp butter
- 185 gram sugar
- 185 gram self raising flour
- 4 tablespoons milk
- 2 large eggs
- Grated rind from 2 large lemons
Syrup ingredients
- 6 tablespoons lemon juice
- 6 tablespoons icing sugar
Instructions
- Cream butter and sugar then beat in eggs
- Add flour, lemon rind and milk mix well
- Pour into loaf tin or whatever you want to use
- Place in slow cooker and cooker and cook on HIGH with Tea Towel under lid
- Remove cake tin from cooker when cake is cooked and prepare syrup
- Using a metal skewer prick holes in cake
- Pour syrup over cake and allow to cool completely before removing from tin.

Very moist and yummy. The whole family enjoyed it.
Really really nice. Simple and quick too. The first one I’ve done and it wont last 1/2 an hour in my house. I used a 3.5 l and substituted sugar with splenda. Thanks for such a great and tasty recipe Roselyn.
