Delicious lemon cake

Cake Ingredients

  • 125 gram room temp butter
  • 185 gram sugar
  • 185 gram self raising flour
  • 4 tablespoons milk
  • 2 large eggs
  • Grated rind from 2 large lemons

Syrup ingredients

  • 6 tablespoons lemon juice
  • 6 tablespoons icing sugar


  • Cream butter and sugar then beat in eggs
  • Add flour, lemon rind and milk mix well
  • Pour into loaf tin or whatever you want to use
  • Place in slow cooker and cooker and cook on HIGH with Tea Towel under lid
  • Remove cake tin from cooker when cake is cooked and prepare syrup
  • Using a metal skewer prick holes in cake
  • Pour syrup over cake and allow to cool completely before removing from tin.

  1. Really really nice. Simple and quick too. The first one I’ve done and it wont last 1/2 an hour in my house. I used a 3.5 l and substituted sugar with splenda. Thanks for such a great and tasty recipe Roselyn.

    What does “syrup ingredients ” mean in the list of ingredients and how much do you use of whatever it is?
