Creamy pumpkin, potato and bacon soup
A hearty slow cooked soup!
Ingredients
- 4-5 potatoes peeled and chopped
- Half of a jap pumpkin
- 2xcups diced bacon
- 1x onion diced
- 1L chicken stock
- Salt and pepper to taste
- Half a tub of thickened cream
Instructions
- Add all ingredients to slow cooker except cream.
- Cook on high for 3-4 hours or until pumpkin is soft.
- Use handheld blender to puree or place batches in blender and blend until smooth return to slow cooker and stir through cream.
- Serve with crusty bread

I made this soup this afternoon. I used a butternut pumpkin and I added 1 carrot, some garlic and a sweet potato. I blended it with a stick blender. I didn’t add cream ( as I didn’t have any in the fridge) It was a bit on the smoky side for me, I think because of the bacon, but it might be better if I add some cream. 🙂 Thank you for the recipe.
