Creamy pumpkin, potato and bacon soup 3 0 5 1

A hearty slow cooked soup!

  • Yields: Serves 4

Ingredients

4-5 potatoes peeled and chopped

Half of a jap pumpkin

2xcups diced bacon

1x onion diced

1L chicken stock

Salt and pepper to taste

Half a tub of thickened cream

Directions

1Add all ingredients to slow cooker except cream.

2Cook on high for 3-4 hours or until pumpkin is soft.

3 Use handheld blender to puree or place batches in blender and blend until smooth return to slow cooker and stir through cream.

4Serve with crusty bread

I made this soup this afternoon. I used a butternut pumpkin and I added 1 carrot, some garlic and a sweet potato. I blended it with a stick blender. I didn’t add cream ( as I didn’t have any in the fridge) It was a bit on the smoky side for me, I think because of the bacon, but it might be better if I add some cream. 🙂 Thank you for the recipe.
