Creamy Chicken & Bacon Pasta (dairy free)
A creamy but light pasta dish that is easy to make, dairy free and kid pleasing.
Ingredients
- 500gm chicken thigh diced
- 3 rashes bacon
- 1 onion diced
- 1 tablespoon minced garlic
- 1 can coconut cream
- 2 cups chicken stock
- 300gm penne pasta
- 1 egg whisked
Instructions
- Add all ingredients (except the pasta and egg) into the pot.
- Cook on high for 1 hour 15 mins.
- Then add pasta and stir through.
- Continue to cook on high for another 45 minutes to 1 hour.
- Stir through egg.
- Serve.

I love his recipe and sondo the kids. I add mushrooms at the start and stir in some baby spinach towards the end.
Would this work without the egg?
I added 250g mushrooms, and substituted coconut milk for the coconut cream because it’s what I had in the cupboard.
Turned out perfectly! Really delicious, my partner loved it too.
Got six portions out of it, so it’s good for the budget.
Can I use cooking cream instead of coconut cream?
If the dairy free part isn’t important sure you could
You could even add some coconut essence to get the same flavour still
Hi, I’m wondering how using breast instead of thigh would affect the cooking time? Also, is the egg essentially raw in there? No extra cooking time with the egg?
The breast and thigh time won’t need to change Alice the same will be fine 🙂 The egg, because it’s whisked and being added to the hot dish will cook almost instantly when it hit the hot meal. The few minutes it would take to serve will see it cooked no worries 🙂
Will this still work if I don’t add the egg? My daughter is dairy and egg free.

I have made this one a few times for my daughter who can’t eat dairy and egg but the whole family loves it and you can’t even tell there is no dairy in it. Great recipe and I didn’t even add the egg.
