Yummy Lactose-Free and Gluten Free Option for a relatively easy family meal. Could be served with cauliflower rice or zucchini noodles if after carb free version, very versatile with ingredients as well.

Creamy Chicken and Bacon Carbonara, Lactose and Gluten Free

Yummy Lactose-Free and Gluten Free Option for a relatively easy family meal. Could be served with cauliflower rice or zucchini noodles if after carb free version, very versatile with ingredients as well.

Ingredients
 

  • 500gms chicken breast, diced roughly
  • 300ml Zymil Lactose-Free Cream
  • 1/2 Cup Liddels Shredded Lactose-Free Cheese
  • 125gms Liddels Lactose-Free Cream Cheese
  • 1 cup diced bacon (can be precooked if preferred)
  • 3/4 Chicken stock
  • 2 cloves of crushed garlic or two tsp garlic paste
  • Pinch of Black Pepper, oregano, thyme, parsley, and basil
  • 350g Gluten Free Pasta (I used San Remo Penne)

Instructions
 

  • Roughly dice chicken and put in the pot with cream, cheese, cream cheese, herbs, and stock. I put on high for 2 hours, stirring at 1 hour and 1.5 hours. At 1.5 hours I took the lid off to thicken the sauce and put the water on to boil for the pasta. I also added the cooked bacon. Once pasta is cooked, drain and then add to the sauce, make sure pasta is well coated, serve immediately.
  • Additional ingredients can be used such as; mushrooms, spring onion, chorizo instead of bacon, sundried tomatoes. Can also be used with normal cooking cream, cheese, and pasta. Could be served with cauliflower rice or zucchini noodles if after carb free version.

  1. Omgosh! A.M.A.Z.I.N.G dish and flavours.
    Made it for the first time ever NOT using pre-made jar of sauce and all 4 family members in sync said “this is so much better than the jar version” this is definately a new recipe I’ll be making frequently! We loved it!!
