Ingredients
 

  • 400ml Coconut Milk
  • 600ml Skim Milk
  • 1/2 cup Rice
  • 1/3 cup Sugar
  • 1 tsp Vanilla

Instructions
 

  • Add ingredients to 1.5L slow cooker.
  • Cook on low for 3.5-4 hours stirring every 20-30 minutes, until rice is cooked and liquid absorbed.
  • Serve with a sprinkle of cinnamon.

  1. I don’t get it, there’s a litre of liquid essentially. Mines been on for over 3.5 hrs and it’s still mostly liquid. Sad.

  2. Delicious – I did cook on high in the 1.5L slow cooker for about 3 hrs. Managed to get away with stirring every half hour for the first 2 hrs. Last hour stir every 10-15 mins – if you don’t stir it bubbles over. Thickens up towards the end. I also used 2-3 times the vanilla and full cream lactose free milk. A family favourite. Serves 4 adults without ice cream or garnish (decent sized serves too).

  3. Beautiful once it’s done. I would suggest high rather than low though as nothing happened after 3 hours on low but once I put it up to high for about an hour and a half it was finally ready. As mentioned above though, when it’s on high you need to stir it more frequently otherwise it bubbles over. Really decent serves for 4-5 people

    Cooked this last night and added a couple of handfuls of sultanas which, when cooked, were plump, juicy and absolutely elevated this recipe to the next level, amazingly good.

    Very creamy, very delicious. You must stir, stir, stir to get it really creamy. Used about 2 and 1/2cups soy milk and 1/2 cup of very thick Icoconut cream at the start. Had coconut cream to use up.
    I added cinnamon stick, fresh grated nutmeg, vanilla and half cup of sultanas also sneaked in a dessert spoon of dessicated coconut.
    Used half cup of sugar and is quite sweet enough with the sultanas.
    I also put less liquid in than the recipe stated at the start to stop it boiling over then added more soy milk at the end to required creaminess. About 2 hours on high and then to low for about an hour.

    Grandies devour this
    recipe of Creamed Rice. Definite winner, would like to try some of the other Creamed Rice recipes but can’t stop making this very successful one. ?
