Cracker Meatballs

These meatballs are so full of flavour and super easy and quick to make. Sure to be a family favourite, just like it is in our house!

Ingredients
 

Meatball

  • 500 grams beef mince
  • 2 medium eggs
  • 1 tsp dried oregano
  • 1 tsp dried garlic
  • 3 Tbs uncooked rice
  • Salt and pepper to taste

Sauce

  • 1 500gm tin rosella tomato soup
  • 1/4 cup bbq sauce
  • 1/4 cup masterfoods sweet chilli sauce
  • 2 tsp english or dijon mustard
  • 3 tsp lemon juice, fresh or bottle

Instructions
 

  • Mix all the meatball ingredients really well together in a bowl. Mix until the protein becomes soft and looks ‘less wet’. I use my hands. Roll into golf ball sized balls. Put in a 3.5lt slow cooker.
  • In a jug combine the sauce ingredients. Mix well. Pour over meatballs. Cook on low for 4-5 hours.

Notes

  • Serve over mash, rice or pasta.
  • I have finally perfected my meatball recipe! These meatballs are so full of flavour and super easy and quick to make. The rice in the meatballs thicken the sauce to a lovely consistency. Sure to be a family favourite, just like it is in our house!

    I used about 800grams of mince and was short on time, so cooked it for 3 hours on high!….. My master 11 even asked for there to be some left for school tomorrow!!

  4. My family loved this recipe, from a 40 ish year old to a two year old. I had made two lots, one family had it on rice (absolutely delicious) and the other family had it with vegies and loved it as well.

  5. I made two lots of this, one family served it on mashed potato (absolutely delicious) and the other family served theirs with vegetables and loved it as well. Ages from 40ish to almost 2 and everyone ate it, even the fussy eaters!!!

  8. Made this last night in my new cooker. My friends and family loved it!I tripled it but used 500g of pork mince 1kg of beef. Everyone cleaned up their plates ,I served it with spaghetti ?

  9. Im wanting to make this for dinner tomorrow night but wondering if I doubled the recipe would I need to double the amount of eggs in the mixture?

  10. Simple and tasty. A double batch in my large slow cooker worked well, and I used Passatta instead of tomato soup. I stirred it gently a couple of times, and cooked it 1 hour on high, 2 and 1/2 hours on low. Lovely served with grated fresh Parmesan cheese on pasta.

    I’ve never been a meatball kinda guy. But. This was so delicious my taste buds were doing back flips. I cooked yesterday, kept in fridge 24 hours then reheated. The sauce reduced down to be thick and tasty.

  12. One of my favourites, I don’t love cooking with mince in the slow cooker but this recipe changed that for me.. I do add more vege in the balls and as a side to the dish, but otherwise I dont change anything. I usually double the recipe as i have a large slow cooker, and i suits me as i use the leftovers as a pasta sauce/bolognese. Yum.. Great recipe thanks!

    I’m always a little skeptical of meatball recipes and their claim to be delicious, so I confess this one was no different when I happened upon it. I’m so glad to be proven wrong this time.   14. Made this last night. Used a spicier sweet chilli sauce. Served over mashed potato and steamed Butter beans. We all loved it!!

  15. Nice dish but didn’t win my family over. Followed the recipe but we all found it way to sweet.
    Just wanted to post so others know it’s a sweet dish.

  16. This recipe is a weekly must in our home. Its a winner with my fussy 2 year old and Partner loves taking them to work the day after and making homemade meatball subs with them. We serve them with Mash & veg. They are deeeellliiissshhh

    I made this with a twist today using 1kg mince 🙂
    I skipped the meatball making but include the meatball ingredients (no eggs or rice, but still add the herbs and garlic that would have gone in the meatballs) and added all the sauce ingredients to the mince too to cook

    Then served mixed with cooked spiral pasta 🙂

    Fed heaps and the kids loved it!

  18. Tried this recipe for the first time, with a couple of tweaks. Used 800g of mince, and used the tin of soup as well as some passata I needed to use up. Also had some Italian herb mix to finish off, so used that instead of just the garlic and oregano. The flavour and texture of the meatballs were lovely, but found the sauce a little too sweet. Will play around with the balance of flavours (maybe add more lemon juice?) because I’d like to make it again.

  19. Just to add to my previous comments, my slow cooker cooks quite hot. I might try a shorter cooking time next time – my sauce may have reduced too much, making it overly sweet. Thanks for sharing the recipe, Kirsten! (I had to explain to my kids why they’re called Cracker Meatballs. They were expecting crackers in them!)

  20. A family hit! Made this for a birthday party and was loved by adults and kids alike!
    I did use smokey BBQ sauce for an extra kick though.

  21. lovely recipe, had it for tea and we all liked, had no tinned tomato soup so used a sachet of cup a soup and tomato paste was nice
