Cowboy Balls

Ingredients
 

  • 2 cups small cubed sweet potato
  • 350g diced frozen vegetables (I used peas, carrot, corn, beans, broccoli)
  • 2 x 555g can Baked beans in BBQ Sauce (I use Heinz)
  • 1 x 420g can condensed tomato soup (I use Heinz salt reduced)
  • Meatballs – small raw beef. I used 2 trays of 20 (40 total)
  • 120g baby spinach leaves
  • — To serve
  • Grated Parmesan to garnish
  • 1 fried egg per person to serve
  • Crusty buttered bread stick slices (we like thick cut Turkish Garlic Loaf

Instructions
 

  • Add sweet potato, frozen vegetables, beans, and soup to slow cooker and stir to combine
  • Place raw meatballs on top.
  • Cook on low for 2.5hrs then gently stir again to mix meatballs through the other mix, now that they have firmed up.
  • Continue to cook for another 1.5hrs on low.
  • Stir through spinach leaves and leave to cook for remaining 30mins, still on low.
  • Total cook time is 4.5hrs.
  • Serve with a scattering of Parmesan, a soft cooked egg on top, and fresh buttered bread to soak up the sauce!

  1. Made this tonight with a few little changes , absolutely delicious!!!
    Changes:
    Used 2x Heinz’s baked beans in ham sauce and 1x Heinz bb in bbq sauce, with a good squirt of bbq added.
    Added an extra bit of Heinz tomato soup (the smallest size can)
    Only used one tray of meatballs and a packet of Hans Ham steaks (3 in the packet) sliced into 1cm cubes.
    Hubby also cut up some Old El Paso jalapeños on top of his for a bit of kick.??
    Served with sour dough, pecorino cheese and fried egg.

  2. Made this the other night and it was so yummy! I didn’t have baked beans but had a can of red kidney beans so I added some home-made tomato sauce and some bbq sauce to the mix. I forgot to put in the baby spinach but it didn’t really matter (I’ll remember for next time hahaha). It was an absolute winner and we have 2 containers left over in the freezer — just so delicious! The fam. is now calling it Cowboy’s Balls!!

  3. First time making this for dinner tonight. The only thing I altered, was that I do not like baked beans in BBQ sauce, so used salt reduced tomato ones instead. So yummy and perfect for a Melbourne winter.

    This was a nice easy enjoyable family fav meal. I didn’t have any spinach but it was still good and I think next time I’ll add fried bacon with the egg and call it breakfast for dinner ?
