Corn Beef Fritter Squares
Ingredients
- 300g leftover silverside, processed quite fine in food processer
- 300g can corn kernels, drained
- ½ large red capsicum, fine diced
- 1tsp dried parsley
- ½ tsp cracked black pepper
- 6 eggs whisked
- ¼ cup SR flour
- ½ cup grated tasty cheese
Instructions
- Combine all ingredients except cheese and pour into a slow cooker lined with baking paper
- Scatter grated cheese over the top
- Cook on high for 60-70mins in a 7L slow cooker with tea towel trick in place
- A smaller slow cooker is ok too but as it will be a deeper fritter it will just need extra time to set to firm
- Lift out by baking paper and cut into squares
- Enjoy this great recipe making use of your leftover silverside / leftover corned beef!

Leftover corned beef?? Not if it’s cooked in Dry Ginger… will try the tinned one…
Many folk do double silversides at once so they DO have leftovers for lunch meats etc 🙂
I made this last week , I usually make corn fritters in the frypan with leftover corn beef but since I have become a new slow cooker central member and have made about half a dozen recipes from here now and all have been wonderful , I decided to try this with my honey mustard corn beef I tried , and I was very surprised, it was sooo quick and easy and very tasty . I’m slow cooker central crazy —-love it ❤️
First time sc this recipe. Wasn’t quite sure how it would turnout. But it was delicious ? and a big hit with my hubby. Giving it a 10/10.
I did add my usual 1 teaspoon dried thyme & 1 spring onion diced.
NOTE: I wanted this as a meal so I sc in my 3.5L Westinghouse sc. on high for 2 hours. Cooked perfectly. Thanks Jenny P ?
