  • 4 chicken drumsticks,
  • 4 bone in chicken thighs
  • 2 carrots chopped
  • 2 sticks celery chopped
  • 2 onions quartered
  • 100g chopped bacon
  • Plain flour
  • Fresh thyme
  • 2 cloves garlic crushed
  • 1 tbs tomato paste
  • 300ml red wine
  • 100ml chicken stock
  • 150g mushrooms quartered


  • Put onion,carrot and celery in slow cooker,season with salt and pepper.Fry bacon and set aside.
  • Put flour in bag and season chicken and add to flour.Dust off excess flour and fry in a little oil in pan.
  • Add browned chicken pieces to slow cooker and sprinkle bacon over the top.
  • Add garlic and tomato paste to fry pan and cook for 1 minutes.Add wine and bring to boil for 2 minutes,add chicken stock return to boil,pour over chicken.
  • Cook on low for 6 hours,
  • After 3 hours add mushrooms.
  • Thicken with a little cornflour for a thicker sauce.
