Coq au vin

Ingredients
- 4 chicken drumsticks,
- 4 bone in chicken thighs
- 2 carrots chopped
- 2 sticks celery chopped
- 2 onions quartered
- 100g chopped bacon
- Plain flour
- Fresh thyme
- 2 cloves garlic crushed
- 1 tbs tomato paste
- 300ml red wine
- 100ml chicken stock
- 150g mushrooms quartered
Instructions
- Put onion,carrot and celery in slow cooker,season with salt and pepper.Fry bacon and set aside.
- Put flour in bag and season chicken and add to flour.Dust off excess flour and fry in a little oil in pan.
- Add browned chicken pieces to slow cooker and sprinkle bacon over the top.
- Add garlic and tomato paste to fry pan and cook for 1 minutes.Add wine and bring to boil for 2 minutes,add chicken stock return to boil,pour over chicken.
- Cook on low for 6 hours,
- After 3 hours add mushrooms.
- Thicken with a little cornflour for a thicker sauce.
