Complete Roast Pork Dinner

Roast Pork + Vegetables + Gravy ... all in a one pot dinner! How much easier could it get than this? Perfect Sunday Roast dinner 🙂

Ingredients
 

  • 3 long pork tenderloin fillets (1-1.5kg total weight)
  • 8 whole baby potatoes
  • 4 carrots
  • 2 large pieces of pumpkin
  • 4 fresh corn cobs
  • 3 tablespoons of roast meat gravy powder
  • 1T cornflour to thicken at the end (mixed with 1T water)

Instructions
 

  • Lay pork fillets in slow cooker and arrange baby potatoes around pork
  • Lay carrots on each end
  • Sprinkle the dry gravy powder over the pork
  • Cook on low for 8hrs
  • 2 hours PRIOR to finish time add the large pieces of pumpkin to the pot
  • 1 hour PRIOR to finish time add the corn cobs to the pot
  • When finished remove pork to rest and vegetables to a covered dish to keep warm
  • Add the cornflour slurry to the cooking juices/gravy mix and whisk well
  • Move your searing slow cooker bowl onto the stove on high (or transfer liquids to a saucepan for this step) and thicken gravy over high heat while whisking occasionally for 5-10mins or until thick
  • Slice pork and plate with potatoes and carrot and corn. Halve pumpkin pieces to serve 4
  • Serve it all with the amazing gravy at the end

  1. I made this but without corn or pumpkin and it turned out great! I had a pork shoulder roast instead of fillets but still worked a treat. Definitely doing this again!

  2. The meat was lovely and tender but I found the Carrots and pumpkin (I used squash) didn’t cook well enough so had to finish them off in saucepan. I think next time I will make the veg separately later.

  3. I cut my potatoes and carrots into smaller pieces and they cook well. I also use auto so it cooks on high for 2 hours and then I leave on low for about 4 hours. I also use a 3 1/2 litre sc.

  4. I cooked this the other day and the smell that went through the house was amazing. OMG! The meat turned out to be so very tender and tasty and the veggies were cooked nicely, but I just browned them in a pan at the end. Definitely a winner meal!

    Made this today. I only used one piece of pork fillet, cut in half.
    Had potato and carrots to put on with the meat. Slowcooker it on low for 4 hours and it fell apart and veggies were cooked to perfection. Steamed some cauliflower and broccoli to go with.
    Poured the juices into a saucepan to make the gravy, was easy to do.
    Love it, have leftovers for tomorrow.
