This is our take on Colcannon, a traditional Irish dish of mashed potatoes with kale or cabbage.
We usually serve this with roast pork or pork and cider.

Colcannon Style Mash Potatoes

This is our take on Colcannon, a traditional Irish dish of mashed potatoes with kale or cabbage. We usually serve this with roast pork or pork and cider.

Ingredients
 

  • 5 Potatoes, chopped
  • Handful of chopped Cabbage, Kale or Spinach
  • 2 small Spring onions/Scallions, finely sliced
  • 1 tblspn Butter
  • 100ml Cream

Instructions
 

  • Place potatoes in slow cooker bowl, cover potatoes with water
  • Cook on HIGH (Woolworths 1.5L sc) for 4hrs
  • Mash potatoes to desired consistency
  • Stir butter and cream into mash
  • Season with salt and pepper if required
  • Add spring onions, cabbage/kale/spinach and stir to combine

NOTE--

  • Cooking time varies depending on potatoes used. Softer ones are quicker, harder/firmer ones tend to take longer.
  • Omit the Spring Onions/Scallions for Low FODMAP

  1. So good and saved me dirtying another dish for greens. Added a little chicken stock powder to the water. I didn’t use spring onion but added a little onion powder.

    We like the crunch so generally use raw greens but you can blanch/boil the kale/cabbage until it softens if you prefer
