1 cup white sugar
1tsp vanilla essence
2 cups SR gluten free flour
3/4 cup milk
1/2 cup coconut
Zest of an orange and lemon
Juice of half an orange and lemon
Cream cheese icing:
250g cream cheese at room temp
1/3 cup gluten free icing sugar
1 tbsp lemon juice
1Cream butter and sugar. Beat in eggs. Stir in remaining ingredients and then beat on medium for a couple of minutes. Cook on high for 2hrs.
3Serve with cream cheese icing. Beat ingredients together until smooth and spread on cooled caked.
