Coconut & Citrus Gluten Free Cake

  • 1 cup white sugar
  • 125g butter
  • 4 eggs
  • 1tsp vanilla essence
  • 2 cups SR gluten free flour
  • 3/4 cup milk
  • 1/2 cup coconut
  • Zest of an orange and lemon
  • Juice of half an orange and lemon
  • Cream cheese icing:
  • 250g cream cheese at room temp
  • 1/3 cup gluten free icing sugar
  • 1 tbsp lemon juice


  • Cream butter and sugar. Beat in eggs. Stir in remaining ingredients and then beat on medium for a couple of minutes. Cook on high for 2hrs.
  • Serve with cream cheese icing. Beat ingredients together until smooth and spread on cooled caked.
