Coconut & Citrus Gluten Free Cake

Ingredients
- 1 cup white sugar
- 125g butter
- 4 eggs
- 1tsp vanilla essence
- 2 cups SR gluten free flour
- 3/4 cup milk
- 1/2 cup coconut
- Zest of an orange and lemon
- Juice of half an orange and lemon
- Cream cheese icing:
- 250g cream cheese at room temp
- 1/3 cup gluten free icing sugar
- 1 tbsp lemon juice
Instructions
- Cream butter and sugar. Beat in eggs. Stir in remaining ingredients and then beat on medium for a couple of minutes. Cook on high for 2hrs.
- Serve with cream cheese icing. Beat ingredients together until smooth and spread on cooled caked.
