Clafoutis
Clafoutis is the french name given to a fruit pudding. This is one of my favourite desserts as it's simple, delicious and light. It goes perfectly with a dollop of cream or icecream.
Serving: 4
Ingredients
- 820g Tinned fruit of choice, drained
- 100 melted butter
- 1/4 C sugar
- 1/2 C Self raising flour
- 2 eggs
- 1/2 C milk
Instructions
- Mix all ingredients except fruit together in a bowl until combined. Place fruit in the bottom of slow cooker, then pour pudding mixture on top.
- I used a 3.5L cooker on high for around 2 hours with a tea - towel underneath. It's cooked when it's slightly coloured on top.

All about the tea towel trick here
Simone…the tea towel is placed on top of your slow cooker with the lid on top of the tea towel to absorb any moisture/condensation that would drop into your .mixture & ruin it. I use it for all cakes/puddings etc! 🙂
