Chunky chicken pie

Inspired by my chunky steak pie that so many people liked I decided to create a chicken pie.

Ingredients
 

  • 1 kg chicken breast diced
  • 1 can of cream of chicken condensed soup
  • 1 chicken stock cube
  • 1 tbsp minced garlic
  • 1 large carrot diced
  • 1 onion diced
  • 1/2 cup frozen peas
  • 1/2 cup frozen corn
  • 1/2 cup grated cheese
  • Salt and pepper
  • Puff pastry

Instructions
 

  • Heat oil in large pan, add onion and carrot to soften, add chicken to slightly brown, mix in all other ingredients and transfer to slow cooker.
  • Cook on low for 4 hours(see note)
  • Line baking dish with puff pastry and transfer mixture. Place another sheet of puff pastry on top and cook in the oven at 180 degrees until pastry has turned a nice golden colour(roughly 20 minutes)

NOTE

  • I brown the chicken first because I think it gives it a nicer flavour. However, if you don't like browning first you can add in the raw chicken with the rest of the ingredients and cook on low for 8 hours.
  • If the mixture is too watery when cooked just use corn flour to thicken ☺️

  1. Yummo! This is really good. So easy to make. I put just corn and carrot in as my kids don’t like peas. Only thing next time I would use separate dishes and put pastry just on top. But best taste and all the family loved it

  5. Yum! gave made a couple of times now. Have done wirh ceeam of mushroom soup and loved it even tho don’t kike mushrooms. Have popped a bit of spinach (defrosted frozen) and has been good too.

  6. The only thing I’d add to my earlier review is prep is listed as 10 minutes, I would recommend altering this. Unless I am too slow a cook, there’s no way dicing an onion, carrot, 1kg of chicken breast plus getting all the other stuff takes 10 minutes.

  7. Very yummy pie! I did add a bit of cornflour at the end, and it was still a bit watery, so I drained it and reserved the liquid and mixed the right amount back in, no probs. I also sprinkled a little more cheese on top before I put the pie lid on. A delicious pie, definitely a keeper, thanks for the recipe!

Chunky Chicken Pie, first time poster, and long time follower, this is the first recipe i have tried from the website and we loved it, my husbands advised, ITS A KEEPER, i felt good throughout the whole process, very simple and easy to follow recipe, i strayed two steps and added Maggi Creme of Chicken soup as well, i used the fluid from the corn kernal to mix it with, and at the end, of the cooking process, i added a thickening, with curry and pinch of brown sugar, i was going to leave it overnight and make a batch of pies tomorrow, realised we had nothing pulled out for tea so decided to pull out the pie maker tonight, i was a little disheartened when i opened the pie maker, (i did overfill them purposely so to fill the top pastry as it rises) BUT after cutting them out, they held solid, pie maker cleaned up nicely at the end, these pies were perfect, delicious, tasty, not dry, fully flavorsome, ill be using the rest of the mixture to make more single pies to freeze for quick snacks and lunches in the morning,
    Thanks for the awesome recipe really love it, next weekend i will be trying the chunky steak and mushroom pie.

  9. I cooked this pie for my family last week. It was a big hit with everyone. The only thing I didn’t put in was the peas as the kids don’t like them. Will definetly try it again.

  10. This dish is so simple & yummy. I added a bit of worstershire sauce & mushrooms & made small individual pie served with mash. My son loves it. This is going on our recipe list as a to do again. 🙂

  13. I make this regularly and serve it with pasta or rice and it’s a hit every time. Easy recipe, tons of flavour and freezes great.
