Chunky Beef and Veggie Casserole

A nice hearty & chunky casserole full of flavour & perfect for that cold winter meal.

Ingredients
 

  • 500 – 800 grams of beef chopped into large chunks (I used rump)
  • 4 small potatoes
  • 2 carrots
  • Broccoli including stems
  • 1 Large brown onion
  • 1 small to medium sweet potato
  • 1 Zucchini
  • 4 Large Mushrooms
  • Pumpkin
  • ½ cup frozen peas & corn
  • 1 tin of chopped tomatoes
  • 1 cup beef stock
  • 1 teaspoon ground cumin seeds
  • 1 teaspoon ground coriander
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon BBQ sauce
  • 1 tablespoon Tomato sauce
  • ½-1 teaspoon onion powder
  • Veggie salt & cracked pepper
  • Optional: Corn flour for thickening

Instructions
 

  • Chop all the veggies up into large chunks & put in slow cooker with meat & spices & sauces.
  • Cook on high 7 hours
  • Use a paste made with corn flour & water to thicken if needed the last 1-1/2 hour of cooking time.
  • I used a 5.5L slow cooker
  • Serve with bread or rolls or eat on its own

  1. Is this really supposed to be 7h on high? Just wanted to check as most stews tend to be on low if it’s such a long process. Can anyone please confirm?
