Christmas Fudge

Ingredients
 

  • 600g white chocolate
  • 1 x 395g can sweetened condensed milk
  • 1T butter
  • 1T vanilla essence
  • ½ cup peeled pistachio nuts, chopped
  • ½ cup dried cranberries, chopped

Instructions
 

  • Place all ingredients into slow cooker except nuts and cranberries
  • Cook on Low for 90mins with lid off
  • Stir every 15mins or so, using a metal or silicone spoon to stir (not wooden).
  • Stir through nuts and cranberries when finished cooking
  • Pour into a baking paper lined tray, 20cm x 20cm, and smooth over
  • Refrigerate to set. I find overnight to be best but can be set from 4hrs
  • When set, cut into squares working quickly and return to fridge to store
  • Will keep in fridge for several weeks or frozen for several months

  1. Hi all I made this Christmas fudge this week it turned out perfectly? I didn’t make any changes followed exactly. It is delicious and not too sweet the salty pistachios and tart cranberries balance the sweetness of the condensed milk and white chocolate. I have put in jars as gifts for my neighbours and friends.

  2. I made it with dark chocolate and it was fantastic. Also made the white chocolate with chopped up red and green snake lollies for the kids! Both were a big success!!

  3. I find in my little cooker that I have too add an extra 100g of chocolate for this to set. Apart from that little tweek, made as per recipe and it is the most popular of the fudges I make – oudoing the Baileys or Caramilk versions

  4. I am not usually a fan of white chocolate but this fudge is amazing. I made it for Christmas presents for the teachers & they commented how lovely it was.

    I made this yesterday! It is delicious! For someone that’s not particularly fond of white chocolate, or fudge in general really, this is lovely! And SO easy. I used a square cake tin and cut it into 48 generous pieces.
    Going to experiment with more flavours next 🙂 Thanks

    I read the recipe wring and put everything in at once! It was still delicious and worked perfectly! Am making rum balls and coconut fudge as little gifts for co-workers. Super cute!
