Chorizo Hotpot with beans
Serving: 4
Ingredients
- 300g chorizo - cut into chunks
- 1 large onion - peeled and cut into chunks
- 2 garlic cloves - peeled and crushed
- 1 red pepper - deseeded and chopped into chunks
- 1 green pepper - deseeded and chopped into chunks
- 1 red chilli pepper - deseeded and chopped fine
- 2 tbsp of tomato purée
- 100 ml of vegetable stock
- 500g carton of passata
- 400g can of red kidney beans - drained and rinsed
- 400g can of butter beans - drained and rinsed
- Either fresh of dried parsley and oregano
- Salt and black pepper
Instructions
- Throw it all into the slow cooker and cook on high for 4 hours.
- I serve it with couscous and freshly baked banquette.
