Chocolate Risotto

Ingredients
- Chocolate Risotto
- - 1 cup arborio rice
- - 2 cups boiling water
- - 1 can condensed milk
- - 2 cups milk
- - 1/4 cup brown sugar
- - 1 tablespoon cocoa
- - 1.5 teaspoon vanilla
- - 1/8 teaspoon salt
- - 200g chocolate chips
Instructions
- Stir together rice, boiling water and condensed milk. Cover and cook on high for 2 hours.
- Add 1.5 cups milk, sugar, cocoa, vanilla and salt. Stir until mixed, cover and cook on high for 1 hour.
- Stir in the remaining milk and chocolate chips. Let sit uncovered for 15 minutes to thicken slightly.
- (Next time I would use 1.5 cups of rice. It was a little too runny for my liking)

Hmmmmm – not a huge fan of this one…. VERY SWEET…. and the chocolate taste from the choc chips is just too rich… This needs a bit of tweeking to get a bit more of a mellow taste – just too sweet and rich. We served it with ice-cream which helped. I’m thinking next time skip the brown sugar and using cooking chocolate not choc chips..
