Chocolate Risotto

Ingredients
 

  • Chocolate Risotto
  • - 1 cup arborio rice
  • - 2 cups boiling water
  • - 1 can condensed milk
  • - 2 cups milk
  • - 1/4 cup brown sugar
  • - 1 tablespoon cocoa
  • - 1.5 teaspoon vanilla
  • - 1/8 teaspoon salt
  • - 200g chocolate chips

Instructions
 

  • Stir together rice, boiling water and condensed milk. Cover and cook on high for 2 hours.
  • Add 1.5 cups milk, sugar, cocoa, vanilla and salt. Stir until mixed, cover and cook on high for 1 hour.
  • Stir in the remaining milk and chocolate chips. Let sit uncovered for 15 minutes to thicken slightly.
  • (Next time I would use 1.5 cups of rice. It was a little too runny for my liking)

  1. Hmmmmm – not a huge fan of this one…. VERY SWEET…. and the chocolate taste from the choc chips is just too rich… This needs a bit of tweeking to get a bit more of a mellow taste – just too sweet and rich. We served it with ice-cream which helped. I’m thinking next time skip the brown sugar and using cooking chocolate not choc chips..
