Chilli con carne with sweet potato
Serving: 6
Ingredients
- 450 - 750g mince (depending how meaty you want it)
- 3 carrots chopped
- 2 onions chopped
- 2 cloves garlic
- 2 x tinned tomatoes
- 2 x small tins of tomato purée
- 2 x chicken stock cubes
- 2 x bay leaves
- 1 green pepper chopped
- 1 x red pepper chopped
- 1/2 to 1 Cup of water (enough to loosen the mixture but not make it too saucy)
- Tin of kidney beans (drained and rinsed)
- 1/2 cup of red wine
- Basil
- Oregano
- Pepper (I don't add salt but you can)
- Mild or hot chilli powder to taste - I use about 4-5tsps of mild to give good flavour but not spicy.
- 1 tsp smoked paprika
- 1 large sweet potato
Instructions
- Saute off onions, carrots and garlic in pan then add I sc
- Brown mince and add to sc
- Add remainder of ingredients to sc (except the sweet potato unless pushed for time and you could add now)
- Cook on high for an hour
- Meanwhile roast off some sweet potato in a little olive oil in oven at 200C (- it gives an amazing caramelized taste to the chili)
- Once roasted add to chili
- Switch to low for as long as you have (I usually do about 6 hours) and it's delicious x
