EmailTweet 1 Full-screen Chilli con carne with sweet potato Beef, Mince March 13, 2015 Chilli con carne with sweet potato 0 0 5 0 Prep: 15 mins Cook: 7 hrs 15 mins 7 hrs 7 hrs 15 mins Yields: 6-8 Ingredients450 - 750g mince (depending how meaty you want it) 3 carrots chopped 2 onions chopped 2 cloves garlic 2 x tinned tomatoes 2 x small tins of tomato purée 2 x chicken stock cubes 2 x bay leaves 1 green pepper chopped 1 x red pepper chopped 1/2 to 1 Cup of water (enough to loosen the mixture but not make it too saucy) Tin of kidney beans (drained and rinsed) 1/2 cup of red wine Basil Oregano Pepper (I don't add salt but you can) Mild or hot chilli powder to taste - I use about 4-5tsps of mild to give good flavour but not spicy. 1 tsp smoked paprika 1 large sweet potato Directions1Saute off onions, carrots and garlic in pan then add I sc 2Brown mince and add to sc 3 4Add remainder of ingredients to sc (except the sweet potato unless pushed for time and you could add now) 5 6Cook on high for an hour 7 8Meanwhile roast off some sweet potato in a little olive oil in oven at 200C (- it gives an amazing caramelized taste to the chili) 9Once roasted add to chili 10 11Switch to low for as long as you have (I usually do about 6 hours) and it's delicious x Submitted by Louise Finch close full screen 00:00 0 Reviews Cancel reply Your comment/review...All fields are required to submit a review.Your name ...
