Chicken, Tofu and Veg

  • 1-2 chicken breast
  • 200g tofu
  • Oil
  • 2 tsp minced garlic
  • 1 tsp grated ginger
  • 1/2 cup sweet chilli sauce
  • 1 chicken continental stock pot
  • 1 carrot sliced
  • 1/2 capsicum sliced
  • 1/2 onion diced
  • Handful of mushrooms diced
  • 2 spring onions chopped
  • 1 cup mint leaves chopped
  • 1 cup coriander chopped


  • -Heat oil in frying pan
  • -Cook onion in frying pan until it begins to soften then place in slow cooker
  • -Cook tofu in frying pan for a few mins until it just starts to go crispy then place on slow cooker
  • -Cook chicken in frying pan for a few mins until it starts to go white on the outside then add to slow cooker
  • -Add all other ingredients to slow cooker and combine
  • -Cook on high for two hours or until chickens cooked through
  • -Serve with rice
