Chicken, Tofu and Veg

1-2 chicken breast

200g tofu


2 tsp minced garlic

1 tsp grated ginger

1/2 cup sweet chilli sauce

1 chicken continental stock pot

1 carrot sliced

1/2 capsicum sliced

1/2 onion diced

Handful of mushrooms diced

2 spring onions chopped

1 cup mint leaves chopped

1 cup coriander chopped


1-Heat oil in frying pan

2-Cook onion in frying pan until it begins to soften then place in slow cooker

3-Cook tofu in frying pan for a few mins until it just starts to go crispy then place on slow cooker

4-Cook chicken in frying pan for a few mins until it starts to go white on the outside then add to slow cooker

5-Add all other ingredients to slow cooker and combine

6-Cook on high for two hours or until chickens cooked through

7-Serve with rice
