Chicken, Tofu and Veg
Serving: 4
Ingredients
- 1-2 chicken breast
- 200g tofu
- Oil
- 2 tsp minced garlic
- 1 tsp grated ginger
- 1/2 cup sweet chilli sauce
- 1 chicken continental stock pot
- 1 carrot sliced
- 1/2 capsicum sliced
- 1/2 onion diced
- Handful of mushrooms diced
- 2 spring onions chopped
- 1 cup mint leaves chopped
- 1 cup coriander chopped
Instructions
- -Heat oil in frying pan
- -Cook onion in frying pan until it begins to soften then place in slow cooker
- -Cook tofu in frying pan for a few mins until it just starts to go crispy then place on slow cooker
- -Cook chicken in frying pan for a few mins until it starts to go white on the outside then add to slow cooker
- -Add all other ingredients to slow cooker and combine
- -Cook on high for two hours or until chickens cooked through
- -Serve with rice
