Chicken Soup

A nutritious chicken soup made on a whole chicken and packed with the goodness of vegetables!

Ingredients
 

  • 1 x Whole Chicken
  • 3 x Large Carrots
  • 2 x Large Zucchini
  • 1 x Large Onion
  • 4 x Celery Sticks
  • 1 Cup Peas & Corn
  • 1 TBS Minced Garlic
  • 3 Cups Chicken Stock
  • 1/2 TBS Tumeric Powder
  • Cracked Pepper
  • Salt

Instructions
 

  • Rub chicken in garlic, pepper, salt & turmeric.
  • Cook chicken, carrot, onion, celery & stock on high for 2 hours.
  • Take out chicken pull meat off the bone.
  • Turn on low.
  • Add chicken meat back in along with peas & corn.
  • Cook another 2 hours.
  • Add Zucchini & cook for another hour.

Notes

  • All veggies were roughly chopped into 2cm chunks
  • The first time I made this we added the zucchini with all the veg at the start and it was really sloppy - we prefer firmer but you could add all together if you like
  • Add as many other spices to your liking, usually I would additionally use ginger, chilli powder & curry powder
