Chicken Soup
A nutritious chicken soup made on a whole chicken and packed with the goodness of vegetables!
Serving: 6
Ingredients
- 1 x Whole Chicken
- 3 x Large Carrots
- 2 x Large Zucchini
- 1 x Large Onion
- 4 x Celery Sticks
- 1 Cup Peas & Corn
- 1 TBS Minced Garlic
- 3 Cups Chicken Stock
- 1/2 TBS Tumeric Powder
- Cracked Pepper
- Salt
Instructions
- Rub chicken in garlic, pepper, salt & turmeric.
- Cook chicken, carrot, onion, celery & stock on high for 2 hours.
- Take out chicken pull meat off the bone.
- Turn on low.
- Add chicken meat back in along with peas & corn.
- Cook another 2 hours.
- Add Zucchini & cook for another hour.
Notes
- All veggies were roughly chopped into 2cm chunks
- The first time I made this we added the zucchini with all the veg at the start and it was really sloppy - we prefer firmer but you could add all together if you like
- Add as many other spices to your liking, usually I would additionally use ginger, chilli powder & curry powder
