Chicken Pumpkin & Feta Flan

  • 1 cup leftover roast chicken
  • 1/2 cup diced pumpkin
  • 2 tbs honey
  • 1/2 pkt of feta
  • 3 tbs fresh basil leaves or pesto
  • shortcrust pastry


  • Line dish with pastry.
  • Layer chicken on the pastry and then top with pumpkin dipped in honey, feta and basil.
  • Can be cooked straight in the slow cooker or in dishes. No water needed. Tea towel under the lid.
  • Cook for 1 1/2 - 2 hours on high
