Chicken Pumpkin & Feta Flan
- 1 cup leftover roast chicken
- 1/2 cup diced pumpkin
- 2 tbs honey
- 1/2 pkt of feta
- 3 tbs fresh basil leaves or pesto
- shortcrust pastry
- Line dish with pastry.
- Layer chicken on the pastry and then top with pumpkin dipped in honey, feta and basil.
- Can be cooked straight in the slow cooker or in dishes. No water needed. Tea towel under the lid.
- Cook for 1 1/2 - 2 hours on high
