Chicken Lasagna
A very rich delicious take on a family favorite. Chicken lasagna with spinach and cream cheese.
Ingredients
- 2 x 400g cans of diced tomatoes
- 1tsp minced garlic
- 1tsp mixed herbs
- 1 onion
- 1/2tsp salt
- 4 cooked chicken breasts broken into pieces
- 500g frozen spinach
- 500g dry lasange sheets
- 250g cream cheese
Instructions
- Take tomatoes, garlic, herbs, onion and salt and blend with a stick blender then place into slow cooker.
- Add frozen spinach and freshly cooked chicken.
- Mix well and add pasta.
- Mix again.
- Cook on low for 3 1/2 hours.
- Add large dollops of cream cheese and let it simmer for another 30 mins.
- Serve.
Notes
- Alternatives you can leave out first five ingredients and use your favorite 800g pasta sauce.
- Pasta alternatives. Use macaroni, gluten free pasta or gnocchi if you wish instead of the lasagna sheets.
- You can use fresh spinach too.
- If you really must you can layer this but it's not necessary.
