Chicken, stuffing and veggies cooked in an easy gravy... A great alternative to a traditional roast
Serving: 4
Ingredients
- 4-5 potatoes (peeled and in large chunks)
- 4 carrots (peeled)
- 1 onion (sliced)
- 1/2 can mushroom soup
- 1/2 can chicken soup
- 4 chicken breasts
- Dry stuffing mix (or seasoned breadcrumbs)
- 1 cup Peas
- Butter (optional)
- Grated cheese (optional)
Instructions
- * put the potato, onion, carrot, mushroom soup and chicken soup into your slow cooker then mix well
- * put the chicken breasts on top, sprinkle with cheese (optional) then stuffing mix, add a dob of butter on each chicken breast
- * cook for 4 hours on high then remove the chicken breasts. Add the peas to the veggies and gravy, mix well, then put the chicken breasts back on top
- * cook for another hour on high

Made this last night. I added 2tsp of minced garlic, 1tsp ginger, and an extra chicken stock cube. My family of 6 thought it was delicious and all 4children aged 2,4,6,9 asked for me to make it again. Only thing I would change, is that the stuffing went soggy, so next time I will try adding a tea towel to absorb the condensation.
