Chicken Gnocchi Soup

Mild and creamy, perfect for families and picky eaters

Ingredients
 

  • 500-600g of chicken breast
  • 1 onion - diced
  • 2 carrots - diced or grated
  • 2 celery sticks - diced or sliced
  • 2 cloves of garlic
  • dollop of oil or butter
  • 1L of chicken stock
  • 1tbs mixed italian herbs
  • 3tbs of cornflour mixed with water to thicken (sometimes needs more)
  • 1 packet of gnocci (we prefer the smaller variety for the kids)
  • 200g fresh spinach
  • 250ml thickened cream
  • salt and pepper to taste

Instructions
 

  • 1. Saute onion, carrot, celery and garlic in butter/oil until flavors mix
  • 2. Add chicken breast to vegies to brown
  • (steps 1 and 2 are optional: you can just add both to slow cooker if short on time)
  • 3. Add chicken stock, herbs, cornflour mix, salt & pepper to slow cooker with chicken and vegies
  • 4. Cook on high for 4 hours or low for 6
  • 5. Shred chicken breast and add gnocci, spinach and thickened cream 30-45mins before serving
  • 6. Serve with fresh bread (or we like to put it on brown rice for the kids)

  1. Husband really liked this. Wasn’t 100% sold on the gnocchi but made another batch with noodles which was lovely. Also used shredded roast chicken instead of chicken breast as I needed to use it up. Delish!

  3. Tried this for a second time today and it it didnt disappoint. Double batch made 2 meals and 7 leftovers. Such flavour. Other than using thighs in place of shredded chook, and baby spinach, I stuck to the recipe, upping the garlic and mixing a very strong vegeta chicken stock. I can see my self making this so many times…..

  4. This was delicious! I bought store bough gnocchi to add to it but i’d recommend adding it half way through the cook as it took along time to soften

  5. We normally have simple soups like pumpkin, found this recipe yesterday & made it-OMG Yum, hubby had it for breakfast, definitely will be making this again, so simple & extremely tasty. We have never used gnocchi & next time we will brown them to see how they turn out

  10. This was an amazing meal! Our 10yr old took charge of dinner last night and this was quick and easy for her to prepare. We swapped out the garlic for garlic oil and onions for spring onion tops. Kids (10 & 7) went back for seconds – so now it’s on our regular meal list! Thanks

  14. We have this nearly every week over colder months. We love it. I don’t brown the chicken I just put it all in the slow cooker and I leave out the carrots

  15. Great taste and such an easy recipe. Made it with lactose free cream and half chicken stock and half veggie stock as that was all I had, plus added some extra garlic powder at the end to lift the flavour. We all went back for seconds.

  17. This is the best soup I’ve ever made! It’s so tasty and filling! My family went back for a second bowl! I used lactose free cream as my daughter is lactose intolerant. Will definitely be making this on a regular basis!

  18. I made this tonight and it was so delicious. I had some roasted pumpkin and cauliflower in the fridge leftover so I also added that. Also added bacon, and garlic powder. Will definitely be making it again!

  21. Absolutely delicious! I used chicken thigh and didn’t shred it. I also had to use frozen spinach as my local didn’t have any fresh spinach available. I just thawed it and drained it well. Will definitely become a regular to go meal in our house. So easy and very tasty!

    Yum yum yum in my tum tum tum as my 3 year old says! This was lovely, will be having again for sure. I halved the recipe and the cooking time…. a little upset now as there isn’t any left over for lunch tomorrow.

    Made as per the recipe except I used diced chicken thighs, and I did need to add some extra cornflour.

    I tweaked mine slightly – didn’t add celery only because I’m not a fan of cooked celery and I used a hot chook from Woolies instead of cooking my own chicken to save time. I will definitely make this again and for personal preference will replace the gnocchi with quartered potatoes instead.

  30. So easy to make, delicious flavour. Only thing I changed was not putting in full packet of Gnocchi, I used the small gnocchi from Aldi probably just over half a packet ??

  31. I made this tonight. Two changes, I used chicken thighs and I boiled them to make my own stock and then shredded the meat to add back in and I used Veal Tortellini instead of Gnocchi . It was delicious, served with crusty bread.

    Used frozen spinach that’s all I had and added extra chicken stock powder
    Plus a small handful of risoni
    Hubby loved it also used pumpkin gnocchi

  35. Love it. I prefer baby gnocci. Have made with bone in thigh and tandoori drumsticks. I use frozen spinach. All worked out perfectly!

  36. This soup has become a regular in our household, and I’ve shared the recipe with several people! It’s a very tasty family favourite. I have tweaked the original recipe a little:
    – I saute a few handfuls of diced bacon, with the chicken
    – I use diced chicken thighs, and don’t shred the chicken later
    – I use 4 cloves of garlic in the recipe
    – We prefer 1/2 packet of gnocchi, so as not to overpower the other ingredients
    – When adding spinach (around 100g), I also add 1/2 zucchini, diced, and 1 cup of frozen peas

  37. We tried the chicken gnocchi soup last night for the first time. Oh boy, it was absolutely delicious! I used a box of frozen spinach instead of fresh. Hubby enjoyed it and went back for thirds.

  39. We tried this tonight and really enjoyed it! Left out the celery because none of us are fans, used normal gnocchi but cut it all in half and was spot on!
    Hubby went back for a big second bowl and said numerous times how delicious it is!

  40. I make this for the family and my two young kids love it. We serve it with some crusty bread.
    I don’t use celery because I don’t like it. I use about 100g of baby spinach chopped and put in at the start so that it gets really soft and wilted. I also use cooking cream. At the end, I put the cream and gnocci in for at least an hour.

  41. I love this recipe. So easy to prepare. I freeze this in single serve portions to take to work and heat up as needed. Sometimes looks to split when defrosted but when heated comes together well with a good stir.

    I make this recipe regularly – my six grand-daughters (ranging in age from 7 to 17) always ask if I can make it for them when they visit for a meal.

    However, I find gnocchi is far too heavy in the stomach so substitute it with either spinach & ricotta ravioli or tortellini. I will also add mushrooms if I have any that need using.

    Thoroughly recommend this to anybody looking for a filling and wholesome soup that can almost be eaten with a fork !! 🙂

  43. Delish! We used tortellini (spinach and ricotta) instead of gnocchi, and I also used chicken breast and it was amazing. We had guest over and she also loved it! Winner all round will def make this again!

    I was skeptical of the Italian herbs but the dish was perfect!

    This is a favorite in our house – I love it! Over the cooler months we have this most weeks, and it always makes enough left overs for lunch or the night after. I add some extra celery, zucchini and leave out a handful of gnocchi. Delicious! Can’t go past it.

    This was delicious, and a very hearty filling soup.
    I used a strong Massel chicken stock, 250g frozen chopped spinach defrosted & drained, 1 kg diced chicken thighs, and added 1pkt. of the Aldi mini gnocchi at 1 hour prior to finish.
    Also used lactose free cream.
    I did pre-sauté the celery/carrot/chicken, as that’s what I prefer.
    Cooked on high, and was done in 3.5 hours.
    Rave reviews!

    First made this last August while recovering from tonsillectomy, was nutritious and easy to swallow while recovering. Has been a favourite soup since, usually add a bit of curry powder for hubby’s preference. Big hit in my household

    Wow this is yummo!! Made exactly as is I did not change a thing. My fussy husband who told me not to make it as it sounded gross, is now eating his second bowl… lol ? My gorgeous ASD son who struggles chewing meat and trying new things had the biggest bowl and asked me to try more recipes off this site as they are good… Unheard of in my household!!     This recipe was absolutely delicious. A simple recipe with loads of flavour. It is a definite winner in our house. I changed the spinach for some frozen veg and it worked out perfectly. Definitely would recommend.

    Loved this recipe, followed recipe apart from using thigh fillets and made my own Gnocchi.
    Was beautiful, and was better the following day.

    This is one of Master 15s faves.
    Hes been begging me to make it again – its a super simple recipe and quite budget friendly. Even my 21yo daughter gave it a whirl tonight- requesting extra gnocci next time. Overall a great recipe!
