Chicken Cordon Bleu Casserole

A simple take on a classic dish, even the kids can help out with this one.

Ingredients
 

  • 1 tin of cream of chicken soup (mushroom also works well)
  • 1/4 cup of milk
  • 1/2 tsp oregano
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 4 chicken breast fillets
  • 6 slices of thick ham
  • 6 slices of Swiss cheese (grated cheddar also works well)
  • Packet of dry stuffing mix (I used sage and onion)
  • 1/3 cup of melted butter

Instructions
 

  • Whisk together the soup, milk and herbs till smooth.
  • Put the chicken in the slow cooker.
  • Layer the ham evenly on top of the chicken, then do the same with the cheese.
  • Pour over the soup mix and use a spatula to spread evenly.
  • Sprinkle over some stuffing mix, enough to roughly cover the surface.
  • Then drizzle over the melted butter.
  • Cook on low for 5hours undisturbed - don't be tempted to lift the lid and peek!
  • Dish up and enjoy.

Notes

  • If you want to cook potatoes and veg with this just put them in first thing, under the chicken.
  • I also added a good sprinkle of dry cheddar sauce mix to the soup mixture before pouring over the chicken for extra cheesy-ness.

    The sauce is amazing and the chicken just falls apart, no knife needed.
