Chicken, chilli, salami and cannellini bean soup

  • 12 skinless and boneless chicken thighs. Came to about 1.2 kg of chicken in total
  • 250 chilli salami. (I used a whole knob, sliced chunky and then quartered)
  • 2 tins of washed and drained cannellini beans
  • 1 litre of chicken stock
  • 1/8 red capsicum, sliced thin
  • 3 med to lge size potatoes
  • 1 large zucchinni
  • I white onion diced
  • I leek
  • I heaped teaspoon of minced garlic
  • 2 medium carrots


  • Place everything in your slowcooker except for the cannellini beans. Cook to your liking of tenderness or consistency then add the cannellini beans for the last hour..
  • This recipie is easily adaptable for flavours and taste and quantities. I also added just a drip or two (literally) of seasme oil before serving.
  • This recipie freezes and reheats awesome due to the high liquid content.
