Chicken, chilli, salami and cannellini bean soup
Ingredients
- 12 skinless and boneless chicken thighs. Came to about 1.2 kg of chicken in total
- 250 chilli salami. (I used a whole knob, sliced chunky and then quartered)
- 2 tins of washed and drained cannellini beans
- 1 litre of chicken stock
- 1/8 red capsicum, sliced thin
- 3 med to lge size potatoes
- 1 large zucchinni
- I white onion diced
- I leek
- I heaped teaspoon of minced garlic
- 2 medium carrots
Instructions
- Place everything in your slowcooker except for the cannellini beans. Cook to your liking of tenderness or consistency then add the cannellini beans for the last hour..
- This recipie is easily adaptable for flavours and taste and quantities. I also added just a drip or two (literally) of seasme oil before serving.
- This recipie freezes and reheats awesome due to the high liquid content.
