Delicious Mexican chili chicken bowl. Easily feeds the family 2 dinners or 1 and some lunches. Easy peasy and yum!
4 hrs 10 mins
1 Onion (chopped)
1 Tbsp Olive Oil
3 Tins of Chopped Tomatoes
2 Tbsp Tomato Paste
1 Tsp Crushed Chili
1 Tin of Black Beans
1 Cup Whole Kernal Corn
1 Green Capsicum (chopped)
1 Bottle of Beer (or Ginger Beer)
1 Packet of Taco Seasoning Mix
1 kg Boneless Chicken with Skin On
Salt to Taste
For Serving (Optional):
1Put everything in the slow cooker.
2Cook on low for 3-4 hours.
3Shred the chicken with a fork before serving.
4Taste, add salt if needed.

The alcohol does cook out of the beer.
If you are worried, use ginger-beer instead. I have made it that way and it works perfectly.

If you do not have a packet of taco seasoning mix this may help as a substitute:
1/2 tsp Chili powder (more if you do not like it mild)
1 Tbsp Paprika
1/2 tsp Oregano
1 Tsp Cumin
1 Tsp Brown sugar
2 Tsp Stock Powder (I have used one that has celery, garlic, onion and other vegetable flavours in it, I have also used chicken stock and beef stock, all worked fine)
Taste and add salt if needed before serving – I found I did not.
It is not hot at all. Very mild. If you want it hotter, add chili.
1 small bottle or can of beer/ginger is all you need. Around 300ml/1/2 pint is about right.

I do not think it matters much what type of beer you use. I had Heineken in the house last time I made this. Previously I have used Speights. Ginger beer works too.
