Chicken Chili Bowl

Delicious Mexican chili chicken bowl. Easily feeds the family 2 dinners or 1 and some lunches. Easy peasy and yum!

Ingredients
 

  • 1 Onion (chopped)
  • 1 Tbsp Olive Oil
  • 3 Tins of Chopped Tomatoes
  • 2 Tbsp Tomato Paste
  • 1 Tsp Crushed Chili
  • 1 Tin of Black Beans
  • 1 Cup Whole Kernal Corn
  • 1 Green Capsicum (chopped)
  • 1 Bottle of Beer (or Ginger Beer)
  • 1 Packet of Taco Seasoning Mix
  • 1 kg Boneless Chicken with Skin On
  • Salt to Taste

For Serving (Optional):

  • Grated Cheese
  • Sour Cream
  • Fresh Coriander
  • Avocado Slices
  • Corn Chips

Instructions
 

  • Put everything in the slow cooker.
  • Cook on low for 3-4 hours.
  • Shred the chicken with a fork before serving.
  • Taste, add salt if needed.

  1. I do not think it matters much what type of beer you use. I had Heineken in the house last time I made this. Previously I have used Speights. Ginger beer works too.

    It is not hot at all. Very mild. If you want it hotter, add chili.

    1 small bottle or can of beer/ginger is all you need. Around 300ml/1/2 pint is about right.

  3. If you do not have a packet of taco seasoning mix this may help as a substitute:
    1/2 tsp Chili powder (more if you do not like it mild)
    1 Tbsp Paprika
    1/2 tsp Oregano
    1 Tsp Cumin
    1 Tsp Brown sugar
    2 Tsp Stock Powder (I have used one that has celery, garlic, onion and other vegetable flavours in it, I have also used chicken stock and beef stock, all worked fine)
    Taste and add salt if needed before serving – I found I did not.

  4. The alcohol does cook out of the beer.
    If you are worried, use ginger-beer instead. I have made it that way and it works perfectly.

  5. Need to feed a crowd? This is the recipe. Did not alter recipe but next time may spice it up with a bit more chilli -personal preference. But delicious as is. A definate keeper.
