Chicken Casserole
An easy flavour filled chicken casserole, perfect with mash
Ingredients
- 1kg Chicken thigh fillets
- 150g Mushrooms, quartered
- 1 Red Onion, cut in wedges
- 2 Spring Onions (Scallions), sliced
- 125g Cherry Tomato Medley
- 1 Carrot, sliced in rings
- 5 Garlic cloves, sliced
- 1/2 cup Chicken stock
- 2 Bay leaves
- 1 tspn Thyme
- Cracked Pepper
- 1 Green Zucchini, sliced in rings
- 1 Yellow Zucchini, sliced in rings
- 3 Flat Beans, cut in 3
- Handful Spinach leaves
Instructions
- Place chicken, mushrooms, onion, spring onions, tomatoes, carrot, garlic, stock, herbs and pepper in slow cooker bowl
- Cook for approx 6hrs on low (Contempo 5.5L sc)
- Add beans and zucchini about 1hr before serving
- Add spinach leaves and fold through just before serving
- Serve with mashed potatoes or for something a bit lighter Cauliflower Mash or Butternut and Sweet Potato mash
