Chicken and Sweet Corn Soup
Serving: 2
Ingredients
- 500ml Chicken Stock
- 1/2 Chicken Breast sliced thinly
- 420g can Creamed Corn
- 1 Spring Onion sliced thinly
- 1 Egg beaten (optional)
Instructions
- NOTE: this recipe is for 1.5l slow cooker. Adjust ingredients & cooking time accordingly if using a larger cooker.
- Combine all ingredients except the egg and cook on high approx 2hrs.
- If desired stir through the beaten egg just before serving.
- Season with salt and pepper to taste.

Delicious! So quick to make! I have cooked it in my 1.5 Litre, and also doubled the recipe for my 6 Litre. I remove the sliced chicken at the end of cooking time, give it a quick pulse with my stick mixer (to get the consistency I like) and return to the pot. Both times it was full of flavour and satisfying!
My hubby & I absolutely loved this & it was actually nicer than our regular Chinese chicken & sweet corn soup!
I added 1 whole garlic clove & a drizzle of sesame oil after serving. We got 2 servings each out of this recipe so it’s very economical too. Thank you!
