Chicken and lemon herb surprise
Serving: 4
Ingredients
- 80 g oil
- 2 tablespoons honey (optional)
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1⁄4 teaspoon dried chilli flakes
- salt and freshly ground black pepper
- 1.2 kilos of chicken (I used 9 chicken Drumsticks)
- 2 lemons, quartered
- 1 garlic bulb, halved across the cloves
- 4 shallots, peeled and chopped
- 1 teaspoon dried oregano
Instructions
- In a small bowl/jug, whisk together the oil, honey (if using), paprika, onion powder, chilli flakes and salt and pepper.
- Place the chicken in SC bowl.
- Pour the oil mixture over the chicken, turning to coat on all sides.
- Arrange the lemon, garlic and shallot around and under the chicken and sprinkle on the herbs.
- Optional: cover the chicken and place in the fridge to marinate for at least 2 hours or overnight (I did NOT do this).
- Cook on LOW 8 hours or HIGH 4 hours.
- Serve with Rice and Steamed Vegetables.
