Chicken and Chorizo Gumbo
Serving: 5
Ingredients
- 1 tsp sugar
- 2 tsp oil
- 1 kg mixed chicken pieces or chicken thighs
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 1 large onion diced
- 3 sticks celery sliced
- 1 med capsicum diced
- 3 tsp garlic
- 3 med chilli sliced
- 2 mild choritzo sliced 1 cm thick
- 1 tsp cajun spices
- 2 bay leaves
- 3 cups chicken broth
- 1 tsp thyme
- 1 tsp parsley
- 2 spring onion
- 3 cups cooked rice
Instructions
- Place all except rice into the sc and place on high for 2 hours. Remove chicken, cool and de bone if using pieces. Place meat back into cooker and cook for a further 2 hours on low. Serve on top of a bed of rice.
- This was made mild. If you want to make it spicy use hot choritzo and add more cajun,chilli and black pepper to the mix
