Cheesy Broccoli & Cauliflower Bake – Low Carb

A creamy cheesy broccoli and cauliflower bake

Ingredients
 

  • 500g bag of mixed broccoli and cauliflower pieces (or fresh cut yourself if you prefer)
  • 200ml of cooking cream
  • 1 cup grated tasty cheese
  • 1 cup grated mozzarella cheese
  • A shallow cooking dish that fits inside your slow cooker for ease of serving (see notes below)

Instructions
 

  • Place approx 1 inch of warm water in the cooking bowl of your slow cooker - but ensure the water level is not high enough that it could flow INTO your cooking dish when it is placed in the water bath to cook - adjust water level as necessary
  • Take the cooking dish and prepare the following INSIDE this dish
  • Pour broccoli and cauliflower into the cooking dish
  • Mix cream with tasty cheese and pour over the vegetables in the cooking dish
  • Carefully lower this filled cooking dish into the water bath in your slow cooker bowl
  • Place tea towel on slow cooker using The Tea Towel Trick
  • Cook on HIGH for 1hr 30mins or until vegetables are fork tender
  • At this point scatter the Mozzarella cheese over the top of your vegetables and return to cooking for another 15mins until cheese on top is well melted
  • Lift the cooking dish carefully out of the slow cooker bowl
  • Use large spoon to serve.
  • ALTERNATE METHOD: I also cook this recipe directly in my 1.5L slow cooker bowl or 3.5L also. It works just as well this way too. I cooked on HIGH in the 1.5L cooker for approximately 2hrs as it's not as spread out so needs a little more time I found 🙂

    1. I’ve not tried to yet to able to say with certainty but I think that perhaps between the cream in the sauce and the softened veg after cooking it may not look the best or have a great consistency once frozen, defrosted then reheated? If you try though do let us know 🙂

  2. I really really liked this. I’ve been very basic with my sides (rice or potatoes) and suddenly cant eat too much potato, so have been searching for some alternatives. Here is a great one … easy, tasty, cheesy, cheap, filling. I can see myself doing this many times.

  3. I love this and do it often. I do it straight into a 3.5 sc with light oil spray. Tonight i added a bit of extra broccoli and cauliflower, 3 spring onions and chopped 4 rashers of short cut bacon. It needed a bit more liquid so I added 1/2 cup chicken stock. So magnificent

    Ive only cooked beef vege soups and not used to trying anything else. Very interested in trying other reciepes

  5. This has became a family favourite. So much so, it was requested twice by the kids in less than a week! It’s so versatile. I just add whatever vegies need to be used up.

    I used 300ml Nestle cooking cream, added carrot batons to the broccoli & cauliflower + added diced bacon, really enjoyed the dish

  10. Absolutely delicious!! Thank you so much Pauline. Big hit with my family and my parents who we had over for a Sunday roast. I used the alternate method and cooked it on low for 4 hours. I also used the tasty cheese on top as I was out of mozzarella. Will definitely be doing this again. Thanks again. ?

  11. This is one of my favourite slow cooker side dishes. I give it an A++++ as there is so much flavour and so easy. I cooked it directly in the SC bowl because I hate washing up lol. Thanks Paulene for another great recipe 🙂

  12. Without a doubt this is the easiest cauli/broc bake ever. No mucking around with rue, milk etc. I added a bit of Dijon mustard for a bit of oomph. Loved it.

  13. This is actually amazing. I fiddled with mine, used frsh cauli, broccoli, carrot and leek, plus frozen corn and bacon. I dropped the fresh veg into boiling water for about three minutes to drop the cook time as I didn’t start until nearly 4pm and we like to eat early. I used 300ml cooking cream and 1 and a half cups of grated cheese. Cooked straight in 3.5 litre slow cooker.
