Camembert & Basil Breast Pockets

Succulent slow cooked chicken breasts, stuffed with a creamy Camembert and basil filling and served in a fresh tomato base.

  • Yields: 5


5 chicken breast fillets

10 large fresh basil leaves

Camembert - approximately 50g

1 x 400g can of crushed tomatoes

+ toothpicks


1Lay fillets on a cutting board and carefully cut a pocket opening in the top of each one

2Stuff this pocket with 2 basil leaves and a piece of Camembert cheese

3Secure pocket closed with toothpicks

4Pour tomatoes into base of slow cooker and gently lay each breast in the tomato base

5Cook on HIGH for 2.5hrs or until cooked through in your slow cooker

6Remove toothpicks from each breast before serving and top with the tomato puree

7Enjoy beautiful, succulent slow cooked chicken breasts, stuffed with the creamy Camembert and basil filling in the fresh tomato base served with rice or vegetables or even salad
