Camembert & Basil Breast Pockets
Succulent slow cooked chicken breasts, stuffed with a creamy Camembert and basil filling and served in a fresh tomato base.
Serving: 5
Ingredients
- 5 chicken breast fillets
- 10 large fresh basil leaves
- Camembert - approximately 50g
- 1 x 400g can of crushed tomatoes
- + toothpicks
Instructions
- Lay fillets on a cutting board and carefully cut a pocket opening in the top of each one
- Stuff this pocket with 2 basil leaves and a piece of Camembert cheese
- Secure pocket closed with toothpicks
- Pour tomatoes into base of slow cooker and gently lay each breast in the tomato base
- Cook on HIGH for 2.5hrs or until cooked through in your slow cooker
- Remove toothpicks from each breast before serving and top with the tomato puree
- Enjoy beautiful, succulent slow cooked chicken breasts, stuffed with the creamy Camembert and basil filling in the fresh tomato base served with rice or vegetables or even salad
