Camembert, bacon and spinach chicken roll – Canola, Gluten and Soy free

Ingredients
 

  • 1 whole deboned chicken
  • Shortcut bacon
  • Camembert cheese, sliced in 4 length wise (rounds)
  • Handful spinach leaves
  • 2 carrots, sliced in 3 length wise
  • 10 cloves garlic, peeled

Instructions
 

  • Lay chicken out skin side down.
  • Layer camembert, spinach, bacon and roll up.
  • Lay carrot strips in bottom of slow cooker bowl and sit chicken roll on top.
  • Sprinkle garlic around chicken.
  • Cook for 5hrs on high (5.5L Sunbeam Slow cooker)
  • *Optional*add 1tblsp of cornflour to juices with about an hour to go to thicken.
  • Remove chicken to plate and mash juices, carrots and garlic to make a sauce.
