Cabbage and Bacon

A quick prep and forget side dish that goes with everything

Ingredients
 

  • 150gm Cabbage, shredded
  • 150g Red Cabbage, shredded
  • 200g Brussel Sprouts, sliced
  • 1 small eschalot , diced
  • 5 rashers Bacon
  • 60mls Vegetable stock
  • Pinch Cracked Pepper
  • Salt

Instructions
 

  • Toss cabbage, sprouts and shallot in slow cooker insert.
  • Chop 2.5 rashers of bacon and add to vegetables.
  • Add stock and pepper.
  • Cook for 7hrs on low  (Russell Hobbs 3.5L sc).
  • Prior to serving grill/fry remaining 2.5 rashers of bacon and roughly chop.
  • Add salt if required and serve with the crispy bacon scattered/tossed over/through.

Note--

  • Omit shallot for a FODMAP Friendly dish

    I thought this would be a hit with our family and it didn’t disappoint. I cooked on high because I put it on late. I also browned shortcut bacon and added the lot at the beginning instead of adding half the bacon as stated in recipe. It was a perfect side to have with Chicken with Camembert sauce. I could have just eaten the whole dish myself

  2. I’ve been meaning to try this one for ages as I do love cabbage (and everyone loves bacon right lol) but I’ve only EVER had cabbage just cooked in milk and butter as my mum always made it, so I was keen to try something else 🙂
    I had a few alterations to the recipe only by necessity of what I had on hand (only green cabbage, no sprouts and I used shallots instead of eschalots)
    I also was a little short on time so I doubled the veg stock and cooked it on high for around 4hrs in my 3.5L instead of on low
    It was soooo good!
    I loved it and will definitely do cabbage in this way more in future (and next time I’ll have the ingredients and time to also do it as it’s intended to be done)

  3. Oh I’m going to try this tonight. Like Paulene, I only have cabbage on hand so will only use that. I don’t have shallots but will cook onion and maybe some garlic with it. I don’t have vegetable stock but so have vegeta so will use that and will be cooking on high . Hopefully it turns out good
