Broccoli with Blue Cheese Soup
Serving: 8
Ingredients
- 2 heads Broccoli, chopped
- 1 head Cauliflower, chopped
- 2 potatoes, chopped
- 2 litres chicken stock
- 2 brown onions, sliced
- 1 cup dry white wine
- 4 gloves garlic
- 300g Blue cheese
Instructions
- Place all ingredients in slow cooker except Blue cheese.
- Cook on low for 8 hours.
- 1 and a half hours before finish, add blue cheese.
- Blend half hour before finish.
- Serve with crusty bread.

Very yummy! I used veggie stock and didn’t add any white wine. It’s the perfect amount of blue cheese.
Yery nice, an acquired taste however. Must love blue cheese ?
