Broccoli and Leek Soup
A nice, thick and flavorsome soup, great with crusty bread.
Serving: 6
Ingredients
- 3 broccoli, cut into florets
- 2 leeks, roughly chopped
- 4 small potatoes, roughly chopped
- 1 carrot (optional)
- 2 chilli's (optional) sliced once, lengthways
- 2 litres chicken stock
- 300ml sour cream
- teaspoon black peppercorns
Instructions
- Chop all vegies and place in slow cooker with peppercorns
- Add stock
- Cook on low for 5 hours
- Blitz and then add sour cream, blitz to mix

I wanted to make this soup tonight. I am however unsure how much broccoli is needed. What does 3 broccoli mean? Approx what weight do I need please. It sounds so tasty.
That would be three heads of broccoli (stem then cut off and the heads cut into florets)
