A nice, thick and flavorsome soup, great with crusty bread.

  • Yields: 6 large servings


3 broccoli, cut into florets

2 leeks, roughly chopped

4 small potatoes, roughly chopped

1 carrot (optional)

2 chilli's (optional) sliced once, lengthways

2 litres chicken stock

300ml sour cream

teaspoon black peppercorns


1Chop all vegies and place in slow cooker with peppercorns

2Add stock

3Cook on low for 5 hours

4Blitz and then add sour cream, blitz to mix

That would be three heads of broccoli (stem then cut off and the heads cut into florets)

I wanted to make this soup tonight. I am however unsure how much broccoli is needed. What does 3 broccoli mean? Approx what weight do I need please. It sounds so tasty.
