A tasty low carb breakfast slice the whole family can enjoy!

Yields: 8 slices
Ingredients
8 eggs
2 large slices of picnic bacon
1/4 red capsicum (pepper) fine diced
50ml thickened cream
Salt and pepper
Directions
1I cooked this in a silicone cake loaf tin, sitting directly on the base of my searing slow cooker. You could also use a regular cake tin or baking dish
2If your slow cooker has a ceramic bowl be sure to an an inch of water to bowl first rather than cook dry in a ceramic bowl. You can do this water step for all slow cooker types if you like - up to you 🙂
3Spray the tin with non stick cooking spray
4Whisk eggs and combine with cream, red capsicum and salt and pepper
5Cut one slice of bacon (or as much as you need) and cover base of tin with bacon
6Gently pour the egg mixture over the bacon
7Lower tin gently into slow cooker and cook on HIGH for 1hr with The Tea Towel Trick
8After 1hr add a second layer of bacon to the top of the dish (after the egg has set enough to hold this bacon up)
9Continue to cook for another 30mins on high or until egg is cooked through
10Slice and serve
