Budget friendly with simple flavours. Any veggies on hand could be used. Could easily be converted to a curry by adding curry powder to the stock.

1kg Casserole Steak - cubed (I used Gravy Beef)
1 Large Onion - diced
3 Cloves Garlic - crushed
2 Carrots - sliced in rings
I Medium piece Orange Sweet Potato - sliced into rings
1 Medium piece White (or Purple) Sweet Potato - sliced into rings
I head Broccoli roughly cut up
10 Brussel Sprouts
2 Cups of Beef Stock
Approx 1/2 cup Plain Flour
2-3 tablespoons of Gravox Supreme powder
2 tablespoons Italian Dried Herbs
Salt & Pepper
1Make stock if using powder stock base
2Prepare all veggies
3Coat beef generously in flour, Gravox, and salt and pepper all mixed together
4Add beef to slow cooker in layers alternating with veggies
5Add stock. Quick stir to combine.
6Cook 7 hours on Low stirring 2 or 3 times during cooking.
7Serve with rice & crusty bread.
8Makes 6 large serves

Absolutely beautiful. Long story short….my husband and I had weight loss surgery and on minced diet. I do have to pulse blend but it is delicious. We have plenty of it left for many meals. It has all the beef and vegetables we need for our diet. Followed recipe exactly bar the rice and crusty bread
