Beef Nachos

Ingredients
 

  • 500g beef mince
  • 435g can refried beans
  • 1/2 cup canned red kidney beans, drained & rinsed
  • 400g can diced tomatoes
  • 2 Tblsp tomato paste
  • 1 tsp chilli powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/2 tsp dried oregano
  • — To Serve —
  • Corn or Tortilla chips
  • Grated cheese
  • Sour Cream
  • Mashed Avocado

Instructions
 

  • Combine all the nachos ingredients in the slow cooker
  • Cook on low for 5hrs
  • To serve, arrange chips on serving plates, spoon over nachos meat and top with grated cheese (see notes)
  • Add a dollop of sour cream and smashed avocado
  • — Notes —
  • We like to zap the nachos in the microwave for 30-60 seconds per plate to melt the cheese nicely before adding the rest of the toppings, but that’s optional 🙂
  • You can replace the 6 spices with a 40g sachet of taco type seasoning if you prefer to make an easier version.

  3. I don’t know if it’s just because I’ve never had refried beans but the texture was very pasty like and not pleasant.
    Was also way too hot for the two young ones
    A lot of different spices for not a great result.

  4. Oh wow! Best Nachos Ever, even got the approval from my 4yo!! (And no argument about dinner))
    My husband who loves Nachos (if it’s on a venue menu- he will generally go for that), he loved this!!
    I used the taco seasoning packet and added canned lentils and full tin of kidney beans!

  5. Really good! I was a bit unsure about putting raw mince into the slow cooker, but it turned out great. I used lean mince. I did add 1 beef stock cube and some salt and pepper to the mix, but that was it. I used all the herbs except for onion powder as I’d run out. My son demolished his dinner and my daughter said it was really yum.

  6. Family loved this recipe.
    Swapped 500g of beef mince for 800g turkey meatballs. Cut 400g of the meatballs into smaller pieces. Left the other 400g in shape (I couldn’t be bothered cutting them up ?).
    Used whole tin of kidney beans.
    Used taco sachet instead of all the spices.
    Took lid off for last hour(ish) for sauce to thicken.

  7. Just the right kick of spice. This will make for easy weekend meals as the two of us ate one meal with another two going into the freezer.

    One of my kiddies isn’t a fan of corn chips so he made a burrito. Left overs will make Mexican salad bowls for lunch

  9. Yum this was seriously so good. One of my kids isn’t a fan of red kidney beans so next time I will leave them out. Will definitely make this again

    Very nice and easy. Just like chilli con carne really. I doubled the ingredients. Used the T-towel trick halfway through to reduce some of the juice.
