Beef massaman curry

Ingredients
 

  • 2 large onions sliced
  • 1kg beef diced
  • 2/3 cup massaman curry paste
  • 1 cup light coconut milk
  • 1 cup chicken stock
  • 3 medium potatoes cut into large chunks
  • 2 carrots diced
  • 1 cup green beans cut in half
  • 2 tbs brown sugar
  • 1 tbs fish sauce
  • 1 cup raw cashews/or peanuts

Instructions
 

  • 1. Heat oil in pan and add paste cook stirring for a minute until fragrant. Transfer to slow cooker along with all the other ingredients. Combine well (expect brown sugar and fish sauce)
  • 2. Cook on low for 8 hours (or high for 4), Stir in sugar, fish sauce and nuts and serve with jasmine rice

    This was delicious, really tasty! An easy recipe to follow and tweak as suits. I left out the chicken stock and added a full cam of coconut cream about an hour before serving. I steamed the green beans separately and served on top of the Massaman with rice and naan. I highly recommend this one. Thanks for sharing this gem Mel Moore.
