2 large onions sliced

1kg beef diced

2/3 cup massaman curry paste

1 cup light coconut milk

1 cup chicken stock

3 medium potatoes cut into large chunks

2 carrots diced

1 cup green beans cut in half

2 tbs brown sugar

1 tbs fish sauce

1 cup raw cashews/or peanuts


11. Heat oil in pan and add paste cook stirring for a minute until fragrant. Transfer to slow cooker along with all the other ingredients. Combine well (expect brown sugar and fish sauce)


32. Cook on low for 8 hours (or high for 4), Stir in sugar, fish sauce and nuts and serve with jasmine rice
