Beef Curry with Sweet Potato and Spinach

This is a beef curry for those who like a little spice ๐Ÿ˜‰ย 
It smells amazing when itโ€™s cooking in our kitchen too!

Equipment

  • 3.5L slow cooker

Ingredients
 

  • 500 grams diced casserole beef
  • 1 medium onion, diced
  • 1 medium sweet potato, diced
  • 400 ml coconut cream
  • 1 tbsp cornflour
  • 1 tsp minced garlic
  • 2 tsp minced ginger
  • 1 tbsp tomato paste
  • 1 tbsp beef stock powder
  • 2 tsp garam masala
  • 1 tbsp curry powder – I use Keen's brand
  • 1 tsp cumin
  • 1/2 tsp coriander powder
  • 1/2 tsp ground paprika
  • 1/4 tsp turmeric
  • 60 gram baby spinach
  • Optional Garnish: ยฝ cup unsalted cashews, roughly crushed
  • Cooked rice to serve

Instructions
 

  • Add beef, onion and sweet potato to slow cooker
  • Combine all other ingredients (except spinach and cashews) and blend well
  • Pour over beef
  • Cook on low for 6hrs
  • Add spinach to wilt for approx. 10mins prior to serving
  • Serve with rice and sprinkle with crushed cashews if you choose

    Oh my! This curry is packed full of punch and the flavours are amazing! The silky smooth sauce was mopped up with mash for us. Hubby said it was sooo tasty and F****** sensational! Will be making this again. 10/10

    5 stars are not enough for this recipe. It’s THAT good! Lip smacking flavourful and delicious.
    I decided to use the curry as a bunny chow filling as opposed to rice and it works so good! I’m dreaming of when to make this next while I’m eating it.

    This is a delicious meal with stir fried veggies or rice and it’s great for making pies out of the leftovers or just having leftovers the next day for work.
