Beef casserole

This is lovely with a crunchy bread roll

Ingredients
 

  • Beef escalopes - 400g (roughly) *see notes*
  • Onion - 1
  • Leek - 1 large
  • Mushroom - (roughly 10 medium)
  • Carrots- 5 ( thin sliced )
  • Potatoes- 4 medium (small cut)
  • Peas
  • Beef stock (1 cube
  • Beef bisto/gravy granules (in the glass jar) - to suit you

Instructions
 

  • Cut beef into chunks and sear/brown
  • Cut up onion, leek and mushrooms and add to sear pan
  • Continue to cook
  • Add sear pan contents back to slow cooker and add the remaining- carrots, peas, potatoes
  • Add water so all is just covered
  • Pop in beef stock cube
  • Add bisto gravy granules to suit your taste
  • Cook for 4 to 5 hours on high
  • Salt/pepper to taste

Notes

  • An escalope is a piece of boneless meat that has been thinned out using a mallet, rolling pin or beaten with the handle of a knife, or merely butterflied. The mallet breaks down the fibers in the meat, making it more tender, while the thinner meat cooks faster with less moisture loss.
